Chicken Mandalay

Ingredients
- 4 chicken cutlets in chunks or strips
- 3 Tbsp flour
- 12 tsp curry powder
- 4 Tbsp oil
- 2 Tbsp lemon juice
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 can consomme 10 34 oz
- 1 jar junior size baby apricots or peaches
Directions
- Shake first 3 ingredients in bag with chicken until coated Saute in oil until golden brown
- Mix remaining ingredients in bowl and add to chicken
- Simmer until chicken is cooked
- Serve with rice
