Chicken Mandarin

Chicken Mandarin

Ingredients

  • 2 12 to 3 lb chicken pieces
  • 14 c flour
  • 2 Tbsp margarine
  • 2 Tbsp oil
  • 4 Tbsp lemon juice
  • 12 c orange juice
  • 2 Tbsp honey
  • 12 Tbsp soy sauce
  • 12 tsp powdered ginger
  • 11 oz can mandarin oranges with juice

Directions

  1. Wash and dry chicken pieces
  2. Shake in a paper bag with flour to coat
  3. In a skillet heat oil and margarine
  4. Add chicken and brown each piece
  5. Drain mandarin oranges and set aside
  6. Mix juice from the can with the lemon juice orange juice honey soy sauce and ginger
  7. Pour sauce over the chicken in skillet
  8. Cover and simmer for 30 minutes or until tender
  9. Add mandarin orange sections for 5 to 10 minutes before chicken is done
  10. Serve with rice
  11. Serves 4
