Chicken Marbella

Ingredients

• 10 chicken breasts halves skinned and boned
• 1 head garlic finely pureed
• 14 c oregano dried
• pinch coarse salt to taste
• pinch pepper to taste
• 12 c red wine vinegar
• 12 c olive oil
• 1 c prunes pitted cut in halves
• 12 c capers with a bit of juice
• 12 c green olives pitted
• 6 bay leaves
• 1 c brown sugar
• 1 c white wine
• 14 c Italian parsley finely chopped

Directions

1. In a large 2 gallon ziploc bag or Tupperware-type container with lid combine chicken garlic oregano pepper and salt vinegar olive oil prunes olives capers and juice and bay leaves
2. Seal and marinate refrigerated overnight
