Chicken Mexicana

Ingredients
- 2 12 lb boneless chicken cut into cubes
- 2 125 oz packets taco seasoning
- 2 14 12 oz cans whole tomatoes diced and drained
- 3 c 12 oz grated sharp Cheddar cheese
- 1 7 oz can diced green chilies
- 1 12 oz can whole kernel corn drained
- 1 8 12 oz pkg corn muffin mix
Directions
- Preheat oven to 350
- Combine chicken and taco seasoning Add tomatoes cheese chilies and corn
- Mix well
- Place in 9 x 13-inch baking dish
- Prepare corn muffin mix according to package directions and spread on top of chicken mixture
- Bake 50 to 60 minutes
- Remove from oven and let rest 20 minutes before serving Serves 8 to 10
