Chicken Mini-Drumsticks
Ingredients
- 36 chicken wings
- 1 c pineapple juice
- 1 c beer
- 12 c soy sauce
- 14 c light brown sugar packed
- 2 Tbsp minced onion
- 1 tsp ground ginger
- 1 clove garlic crushed
- 14 c margarine
Directions
- Remove tips from chicken wings
- Combine pineapple juice beer soy sauce brown sugar onion ginger and garlic
- Stir together until sugar is dissolved
- Add chicken stirring to coat well
- Cover and marinate at room temperature for about 1 hour Drain chicken reserve marinade
- Melt margarine in a large frying pan over medium heat
- Add chicken and cook browning on all sides
- add 12 cup reserved marinade to chicken
- Cover and simmer stirring occasionally over low heat for about 15 minutes or until fork can be inserted into chicken with ease
- Keep chicken moist by using additional marinade as needed
