Chicken Piccata

Ingredients

  • 8 oz chicken cutlets
  • 34 tsp butter
  • 18 c dry white vermouth
  • 18 c lemon juice
  • dill sprigs

Directions

  1. Rinse and pat dry chicken
  2. Melt butter in medium skillet Saute chicken 2 to 3 minutes each side
  3. Add vermouth and half lemon juice
  4. Cover and raise heat to high for 2 minutes
  5. Add remaining lemon juice
  6. Simmer uncovered until done
  7. Transfer chicken and sauce to small platter and garnish with oil
