Chicken Pie Mexican-Style
Ingredients
- 1 small onion finely chopped
- 3 to 4 small tomatoes peeled and chopped
- 2 or more green chili peppers peeled and chopped
- unbaked 9-inch pie shell
- 1 Tbsp butter
- salt and pepper
- 12 c cooked peas
- 1 Tbsp chopped parsley
- 2 c cut up cooked chicken
Directions
- Cook onion in butter until tender
- Add tomatoes salt and pepper cook over medium heat until thick
- Stir in rest of ingredients
- Pour into pie crust
- Bake at 400 for 20 to 30 minutes until browned
- Yields 4 servings
