Chicken Pilaf

Ingredients
- 34 lb slivered raw chicken
- 2 Tbsp oil
- 2 c 4 oz sliced mushrooms
- 1 medium onion chopped
- 1 12 c dry rice
- 1 13 34 oz can chicken broth
- 12 tsp salt
Directions
- Saute chicken in oil until lightly browned
- Add mushrooms onion and rice
- Saute stirring until rice is lightly browned Add broth and salt
- Bring to a full boil
- Cover
- Remove from heat and let stand 5 minutes
- Makes 4 servings each less than 350 calories
