Chicken Prosciutto With Mushroom Sauce

Ingredients

  • 3 whole chicken breasts skinned boned and halved
  • 5 Tbsp margarine
  • 14 c onion chopped
  • 13 c flour
  • 2 Tbsp Dijon mustard
  • 1 c chicken broth
  • 1 c half and half
  • 14 c dry white wine or water
  • 3 jars mushrooms sliced and drained
  • 1 c Swiss cheese shredded
  • 16 oz frozen broccoli cuts
  • 6 slices Prosciutto or thin sliced cooked ham
  • paprika

Directions

  1. Pound chicken breasts between 2 pieces of plastic wrap with meat mallet or rolling pin
  2. Over medium heat melt 2 tablespoons margarine
  3. Cook chicken until browned 5 minutes
