Chicken Quesadillas
Ingredients
- 10 flour tortillas 8 inch
- 3 c shredded cheese Monterey Jack Colby Cheddar
- 1 green bell pepper cut into thin strips
- 1 red or yellow pepper cut into thin strips
- 14 c sliced jalapeno peppers
- 1 medium onion diced
- 3 boneless chicken breasts cooked
- sour cream
- salsa
Directions
- Shred meat from chicken breasts into strips
- Place 5 tortillas on ungreased baking sheet
- Sprinkle each with half of cheese mixture
- Top with chicken strips peppers and onions
- Use jalapenos for desired spiciness
- Top with additional cheese and top with another tortilla
- Bake at 350 degrees for 15-18 minutes or until crisp and heated through
- Cut into wedges and serve with sour cream and salsa
- Serves 6-8 as appetizer
