Chicken Santa Maria

Ingredients
- 2 Tbsp olive oil
- 4 green onions chopped
- 2 garlic cloves minced optional
- 4 skinless chicken breasts cut in small pieces
- 1 jar marinated artichoke hearts drained and diced
- 1 c sweet roasted peppers diced
- 34 c black pitted olives
- 1 pkg rotini pasta
- 12 c Parmesan cheese
Directions
- Cook rotini pasta according to directions on package
- In olive oil brown chicken with the onions and garlic until tender Add artichoke hearts peppers and olives until heated
- Drain pasta toss with Parmesan cheese and combine with chicken mixture Serve with green salad and crusty or garlic bread
