Chicken Veronique

Ingredients

  • 2 whole chicken breasts
  • 2 Tbsp butter
  • 1 c sliced fresh mushrooms
  • 2 Tbsp sliced green onion
  • 13 c chicken broth
  • 1 Tbsp flour
  • 1 c seedless green grapes halved
  • 14 c dry white wine
  • hot cooked rice

Directions

  1. Skin and bone chicken cut into 1-inch pieces
  2. In wok or skillet melt butter over medium heat
  3. Stir-fry mushrooms and onions about 2 minutes
  4. Add chicken and stir-fry about 5 minutes
  5. Blend broth and flour
  6. Add to chicken and vegetables Cook and stir until thickened and bubbly
  7. Stir in grapes and wine heat through
  8. Serve over rice
