Chicken Victoria
Ingredients
- 2 12 lb boneless chicken pieces skinned
- 2 Tbsp vegetable oil
- 1 12 oz La Victoria salsa Victoria
- 13 c water
- 1 17 oz can Niblets corn drained
- 1 green red or yellow bell pepper chopped
- fresh cilantro optional garnish
Directions
- Brown chicken pieces in hot oil for 5 minutes drain off fat Add desired La Victoria salsa and water
- Reduce heat cover and simmer for 30 minutes
- Uncover add corn and bell pepper add more water if necessary
- Cover and cook 10 minutes more
- Makes 4 servings
