Chicken With Eggplant

Ingredients

• 1 quartered chicken
• 2 small eggplants 1 14 lb
• 1 large peeled onion
• 2 small tomatoes 12 lb
• 2 Tbsp olive oil
• 12 c dry wine
• 12 c chicken broth
• 14 c wine vinegar
• 1 Tbsp minced garlic
• 1 bay leaf
• 14 tsp thyme
• 14 tsp red pepper flakes
• parsley

Directions

1. Sprinkle chicken with salt and pepper
2. Set aside
3. Trim off eggplant ends cut in 12 lengthwise and each 12 in thirds lengthwise
4. Then cut across in 1-inch sections total 5 cups Cut onion in 12
5. Slice thin total 1 cup
6. Core tomatoes and cut into small cubes total 1 12 cups
