Ingredients

  • 2 12 to 3 lb fryer cut up
  • 2 c rice
  • 2 medium onions 1 chopped
  • 1 medium green pepper half chopped
  • 1 Tbsp vinegar
  • 3 garlic cloves mashed
  • 12 c tomato sauce
  • 4 Tbsp olive oil
  • 4 c chicken broth
  • 1 8 oz can sweet peas
  • 1 4 oz can pimentos
  • 4 Tbsp parsley
  • saffron
  • 2 tsp salt
  • 14 tsp black pepper
  • 1 bay leaf
  • 14 c cooking dry wine
  • asparagus optional

Directions

  1. Cut chicken in pieces and cook in the pressure cooker with 4 cups of water salt 1 onion 12 green pepper and 1 tablespoon of vinegar for 15 minutes
