Chicken With Rice Arroz Con Pollo
Ingredients
- 2 12 to 3 lb fryer cut up
- 2 c rice
- 2 medium onions 1 chopped
- 1 medium green pepper half chopped
- 1 Tbsp vinegar
- 3 garlic cloves mashed
- 12 c tomato sauce
- 4 Tbsp olive oil
- 4 c chicken broth
- 1 8 oz can sweet peas
- 1 4 oz can pimentos
- 4 Tbsp parsley
- saffron
- 2 tsp salt
- 14 tsp black pepper
- 1 bay leaf
- 14 c cooking dry wine
- asparagus optional
Directions
- Cut chicken in pieces and cook in the pressure cooker with 4 cups of water salt 1 onion 12 green pepper and 1 tablespoon of vinegar for 15 minutes
- Bone the chicken and break meat in pieces about 1 x 2-inches
- Keep the broth after straining it
- Put the oil in a large skillet add garlic chopped onion and green pepper
