Chicken With Zucchini

Ingredients
- 4 chicken cutlets 1 lb
- 12 tsp salt divided
- 18 tsp pepper
- 2 medium zucchini 12 lb cut into thin strips
- 1 large clove garlic minced
- 2 Tbsp thinly sliced fresh basil leaves
- basil sprigs for garnish
- 2 Tbsp olive oil divided
Directions
- Sprinkle both sides of chicken with 14 teaspoon salt and pepper
- In a large nonstick pan heat 1 tablespoon olive oil over medium-high heat
- Cook 2 chicken cutlets 5 to 7 minutes or until cooked through turning once
- Remove chicken to a large serving platter
- Keep warm
- Repeat with the rest of chicken
