Chicken Yassa

Ingredients

  • 4 lb chicken
  • 4 large green peppers
  • 2 bay leaves
  • 1 lime
  • crushed peppercorn
  • salt
  • vinegar
  • 1 lb onions
  • 1 hot chili pepper optional
  • 12 c cooking oil
  • 1 chicken bouillon cube dissolved in 1 12 fluid oz water

Directions

  1. Clean and cut chicken in half or quarters
  2. Put shredded onion on top
  3. Mix juice from lime oil small amount of vinegar bay leaves salt and pepper
  4. Pour over chicken and marinate for several hours
  5. About an hour or so before serving have a hot charcoal fire with grill ready
  6. Grill chicken browning on all sides until almost blackened
  7. In a pot heat a small amount of oil
  8. Add chicken green peppers chili pepper optional chicken bouillon and all the marinade ingredients
  9. Cover and cook gently until chicken is tender about 30 minutes
  10. Serve garnished with sliced tomatoes and lemons
  11. Eat with rice or bread
  12. Very good served with a mixed green salad
  13. Lamb beef or liver can be used in place of chicken
