Chicken Zucchini And Red Pepper Stir-Fry

Ingredients

  • 4 large chicken breasts split skinned and boned
  • 2 cloves garlic
  • 4 small zucchini about 2 lb
  • 2 medium red peppers cored and seeded
  • 1 bunch scallions including stems cut into thirds
  • 1 can 8 oz water chestnuts drained
  • 12 lb medium size mushrooms
  • 5 Tbsp vegetable oil
  • 14 c bottles oyster sauce
  • 1 Tbsp soy sauce
  • 12 tsp sesame oil
  • 12 tsp salt

Directions

  1. Cut away tendon and any excess fat from chicken breasts
  2. Place in freezer just until chicken firms up for easier slicing
  3. Do not freeze solid
  4. Meanwhile insert metal chopping blade in mixer bowl of food processor
  5. Process garlic or chop fine with French knife
  6. Remove chopping blade and insert slicing blade
  7. Place zucchini in feed tube vertically and process or cut in slices with knife
  8. Insert red pepper in feed tube vertically
  9. Process or slice into 18 inch slices with knife
  10. Insert scallion vertically
  11. Process or slice by hand
  12. Process water chestnuts or slice by knife
  13. Put mushrooms on their sides in feed tube Process or cut lengthwise into thirds
  14. Set aside in bowl
  15. To process chicken using slicing blade wedge chicken into feed tube so slicing disk will cut against grain or cut by sharp knife into 14 inch thick slices
