Chili Corn Muffins
Ingredients
- 1 c flour
- 1 c cornmeal
- 2 Tbsp sugar
- 1 Tbsp baking powder
- 2 tsp chili powder
- 34 tsp salt
- 1 scallion
- 1 c milk
- 12 c applesauce
- 1 egg
- 1 can corn drained
Directions
- In mixing bowl combine the flour cornmeal sugar baking powder chili powder and salt
- Chop scallion
- Beat milk applesauce and egg until just combined and stir in scallion and corn
- Stir flour mixture into milk mixture until just combined but still lumpy
- Spoon into prepared muffin pans
- Bake until edges start to brown
- Bake at 400 for 15 to 20 minutes
- They are great with chili and soups
