Chili Rellenos

Ingredients
- 1 can California green chilies 6 to 8
- 12 lb Jack cheese cut into 12 x 12-inch strips
- 12 c flour
- 3 eggs separated
- 3 Tbsp flour
- 14 tsp salt
- oil for frying
Directions
- Drain canned chilies
- Stuff with cheese
- Roll each chili in flour to completely coat
- Shake off excess
