Chili Rellenos

Ingredients

  • 1 can California green chilies 6 to 8
  • 12 lb Jack cheese cut into 12 x 12-inch strips
  • 12 c flour
  • 3 eggs separated
  • 3 Tbsp flour
  • 14 tsp salt
  • oil for frying

Directions

  1. Drain canned chilies
  2. Stuff with cheese
  3. Roll each chili in flour to completely coat
  4. Shake off excess
