Chilled Poached Lemon Apples
Ingredients
- 2 c water
- 1 c sugar
- 1 lemon thinly sliced
- juice of 1 lemon
- 8 small cooking apples peeled and cored
Directions
- Combine first 4 ingredients in a Dutch oven bring to a boil Add apples and return to boil
- Cover reduce heat and simmer 12 minutes or until apples are tender
- Remove apples to 2-quart casserole dish
- Bring syrup to a boil and cook 10 minutes or until reduced to about 1 cup
- Pour syrup over apples cool Cover and refrigerate
- Serve cold
