Chilled Rice Salad

Ingredients
- 9 oz pkg rice pilaf cooked according to pkg directions and cooled slightly
- 1 lb mushrooms sliced
- 1 bunch green onions minced
- 14 c olive oil
- 3 Tbsp red wine vinegar
- 12 tsp Dijon mustard
- 12 tsp salt
- 14 tsp freshly ground pepper
Directions
- Toss rice mushrooms and onion together in large bowl Combine remaining ingredients in small bowl or jar with tight fitting lid and blend well
