Chinese Almond Cookies
Ingredients
- 12 c whole almonds
- 1 c sifted flour
- 12 tsp baking powder
- 14 tsp salt
- 12 c oleo or butter
- 13 c sugar
- 12 tsp almond extract
- 1 Tbsp vodka or water
Directions
- Reserve 36 almonds finely chop or grind remainder
- Sift flour baking powder and salt
- Thoroughly cream butter and sugar Stir in remaining ingredients except whole almonds
- Form dough into 36 balls
- Place on greased cookie sheet
- Press an almond in center of each ball
- Bake in 350 oven for 20 minutes or until lightly browned
- Makes 3 dozen
