Chinese Chicken Soup

Ingredients

  • 2 cans chicken broth
  • 2 c water
  • 2 c bok choy cut into 1-inch pieces
  • 14 lb fresh fettucine or other wide noodles
  • 1 c cooked chicken
  • salt and pepper
  • soy sauce to taste
  • 12 c straw mushrooms canned
  • 14 c Chinese pea pods

Directions

  1. Boil chicken broth and water
  2. When boiling add bok choy Return to boil cook uncovered for 4 minutes
  3. Add noodles Cook chicken
  4. Reduce heat to medium and cook for 4 minutes
  5. Add mushrooms and pea pods and heat through
  6. Season to taste and serve
