Chinese Egg Drop Soup

Ingredients

  • 1 egg
  • 2 c rich chicken broth
  • chopped parsley for garnish

Directions

  1. Beat the egg with a fork
  2. Bring the broth to a simmering point
  3. Remove from heat and slowly drizzle in the beaten egg stirring slowly
  4. The egg should become stringy-looking rather than making the soup appear milky
  5. Garnish with parsley
  6. Serve hot
