Chinese Pickled Beets

Ingredients

  • 1 can beets
  • 23 Tbsp cornstarch
  • 8 whole cloves
  • 1 Tbsp cooking oil
  • 13 tsp vanilla
  • 13 c sugar
  • 13 c vinegar
  • 1 Tbsp ketchup
  • dash of salt
  • 12 c beet juice

Directions

  1. Put sugar and cornstarch in large shallow pan
  2. Stir mixing well
  3. Add vinegar cloves ketchup oil salt and vanilla
  4. Stir again well
  5. Add beet juice from can
  6. Cut beets into bite size and put into pan
  7. Cook over medium fire 3 minutes stirring constantly until it thickens
  8. Serve over rice
