Chinese Winter Soup

Ingredients

  • 1 12 c diced cooked chicken or turkey
  • 2 Tbsp butter
  • 12 c chopped celery
  • 3 c shredded cabbage
  • 1 c mushrooms thinly sliced
  • 6 chicken bouillon cubes
  • 6 c water
  • 14 c soy sauce
  • 1 8 oz can water chestnuts thinly sliced

Directions

  1. Saute celery and mushrooms in butter until crisp-tender but not browned
  2. Add cabbage saute for 3 minutes
  3. Dissolve bouillon cubes in water add to vegetables
  4. Mix well
  5. Add soy sauce water chestnuts and chicken to mixture
  6. Bring to a boil
  7. Cook gently uncovered for 5 minutes
  8. Makes 6 servings
