Chitterlings

Ingredients

  • 10 lb chitterlings
  • 1 large onion spiced with 6 to 8 cloves
  • 2 medium peeled whole tomatoes
  • 14 c vinegar
  • 2 tsp white pepper
  • 5 to 8 red pepper pods
  • 2 celery stalks with tops
  • 2 tsp salt

Directions

  1. Thaw and wash chitterlings through 4 or 5 waters
  2. Turn inside out
  3. Remove excess fat
  4. Add spices except vinegar
  5. Add potatoes
  6. Cover with water
  7. Boil over low heat for 6 hours or until tender
  8. Add vinegar last 20 minutes of cooking
  9. Cut in small pieces
  10. Serve with tasty cold slaw potato salad and corn bread
