Chocolate Almond Brittle

Ingredients

  • 1 c sugar
  • 12 c light corn syrup
  • 18 tsp salt
  • 1 c coarsely chopped almonds
  • 1 Tbsp butter margarine
  • 1 tsp vanilla extract
  • 1 12 tsp baking soda
  • 34 lb dark or milk chocolate confectionery coating

Directions

  1. In a
  2. 1 12-quart microwave-safe bowl combine sugar corn syrup and salt mix well
  3. Microwave on High for 4 minutes
  4. Stir in almonds microwave on High again 4 minutes
  5. Add butter and vanilla microwave on High 1 to 1 12 minutes
  6. Stir in baking soda
  7. As soon as the mixture foams quickly pour onto a greased metal baking sheet
  8. Cool completely
  9. Break into 2-inch pieces Melt chocolate in microwave
  10. Drizzle over top
  11. Yield
  12. About 1 pound
