Chocolate Chip Vanilla Gems

Ingredients
- 2 c. flour
- 1 c. sugar
- 1 Tbsp. baking powder
- 1/3 c. oil or melted butter
- 1 c. milk
- 1 egg
- 1 Tbsp. vanilla
- 1 c. mini chocolate chips
Directions
- Preheat oven to 400°.
- Combine flour, sugar and baking powder in a bowl.
- Set aside.
- In a separate bowl, mix well the oil, milk, egg and vanilla.
- Add the liquid ingredients to the dry and stir just until combined.
- Don’t overmix or the muffins will be tough. Gently fold in the chocolate chips.
- Spoon batter into 24-cup mini muffin pan or 12-cup regular muffin pan that is sprayed lightly with cooking spray.
- Bake 15 - 20 minutes or until golden brown. You can use regular chips if you use regular muffin pans only. Enjoy!
