Chocolate Cream Pie
Ingredients
- 1 12 sq chocolate or 3 Tbsp cocoa
- 2 c milk
- 1 c sugar
- 1 Tbsp butter
- 12 tsp salt
- 3 Tbsp cornstarch
- 2 eggs separated
- 1 tsp vanilla
- 14 tsp cream of tartar
- 14 c sugar
- 1 pie shell
Directions
- Melt chocolate in double boiler
- Add 1 12 cups milk and bring to boiling point
- Combine sugar salt and cornstarch
- Add remaining milk to make a smooth paste
- Add paste to milk and cook until thickened
- Beat egg yolks
- Pour a small amount of hot mixture over yolks before adding them to milk
- Cook 2 minutes Remove from heat and add butter and vanilla
- Cook until lukewarm and pour into baked pie shell
- Cover with meringue of egg whites cream of tartar and 14 cup sugar
- Bake at 350 until meringue is browned
