Chocolate Ganache

Ingredients
- 1 c heavy cream
- 10 oz semi-sweet or bittersweet chocolate chopped 2 c
Directions
- Gently warm the cream in a small saucepan over medium heat until small bubbles begin to appear at the edges
- Remove from heat
- Stir in chocolate until mixture is smooth and the chocolate has melted completely
- Do not stir so vigorously that bubbles form
- If there are any visible lumps strain the mixture through a fine mesh sieve
