Chocolate Gem Pie
Ingredients
- 1 c flour
- 23 c ground pecans
- 14 c packed brown sugar
- 3 Tbsp shortening
- 1 tsp vanilla
- 1 c sifted powdered sugar
- 2 Tbsp chocolate syrup
- 34 c butter softened
- 12 to 1 tsp instant coffee
- 2 eggs
- 3 sq unsweetened chocolate
- 1 c whipping cream
- 1 Tbsp powdered sugar
Directions
- For crust combine flour pecans and brown sugar
- In a heavy saucepan melt shortening and 1 square of chocolate over low heat stirring constantly
- Stir into flour mixture until combined
- Mix vanilla and water and sprinkle over mixture while tossing
- Form into a ball
- Roll out to make a 12-inch circle between 2 sheets of wax paper
- Remove waxed paper
- Place crust into a 9-inch pie plate flute edge
- Prick well
- Bake until surface appears dry Cool
