Chocolate Mint Pies
Ingredients
- 1 box chocolate wafers without icing in the middle
- 1 c butter or margarine
- 2 c sifted confectioners sugar
- 4 1 oz blocks unsweetened baking chocolate
- 4 eggs
- 1 tsp peppermint extract
- 12 tsp almond extract
- whipped cream or topping
- chopped nuts and halved maraschino cherries
Directions
- Cream together butter and sugar
- Blend in melted chocolate and add eggs
- Beat well
- Blend in peppermint and almond extracts
- Use foil cupcake liners
- Fill each cup 34 full Place whipped cream on top of each
- Sprinkle with nuts and top with cherry half
- Freeze for 2 hours
- Defrost 10 to 15 minutes before serving
- Serves 12 to 14
