Chocolate Mint Pies

Ingredients

  • 1 box chocolate wafers without icing in the middle
  • 1 c butter or margarine
  • 2 c sifted confectioners sugar
  • 4 1 oz blocks unsweetened baking chocolate
  • 4 eggs
  • 1 tsp peppermint extract
  • 12 tsp almond extract
  • whipped cream or topping
  • chopped nuts and halved maraschino cherries

Directions

  1. Cream together butter and sugar
  2. Blend in melted chocolate and add eggs
  3. Beat well
  4. Blend in peppermint and almond extracts
  5. Use foil cupcake liners
  6. Fill each cup 34 full Place whipped cream on top of each
  7. Sprinkle with nuts and top with cherry half
  8. Freeze for 2 hours
  9. Defrost 10 to 15 minutes before serving
  10. Serves 12 to 14
