Christmas Gingersnaps

Ingredients

  • 7 12 c flour
  • 2 tsp soda
  • 12 tsp salt
  • 1 tsp ginger
  • 1 tsp cloves
  • 1 tsp cinnamon
  • 1 34 c brown sugar
  • 1 14 c butter
  • 78 c molasses
  • 2 eggs
  • 1 Tbsp grated orange peel

Directions

  1. Sift flour measure 7 cups and sift with soda salt and spices
  2. Sift 12 cup flour and set aside to use only if needed Measure sugar butter and molasses
  3. Turn molasses into small pan and warm slightly add brown sugar and stir until melted
  4. Add butter blending in well
  5. Stir in eggs one at a time
  6. Batter is smooth
  7. Add orange peel
  8. Stir in dry ingredients
  9. Gradually add sufficient flour to make a soft dough that can be kneaded
  10. Knead until smooth
  11. Keep tightly covered and refrigerate overnight Roll out and cut in desired shapes
  12. Bake at 375 for 10 to 12 minutes
