Christmas Potatoes

Ingredients

  • 3 lb potatoes
  • 2 onions thinly sliced
  • 12 tsp salt
  • water
  • 14 c margarine
  • 3 Tbsp flour
  • 2 c milk
  • 34 tsp salt
  • 14 tsp pepper
  • 34 to 1 lb Velveeta
  • 12 c chopped fresh parsley
  • 1 jar pimentos drained

Directions

  1. Peel and
  2. cut
  3. potatoes
  4. into 14-inch slices to make 8 cups Combine
  5. potatoesonions and salt in Dutch ovenAdd water and boil
  6. until
  7. just done
  8. Drain and set aside
  9. Melt the margarine in heavy saucepan over low heat
  10. Add flour and cook for
  11. 1 minute
  12. Graduallyadd milk and cook over medium heat
  13. stirring constantlyuntil
  14. thick
  15. Add
  16. salt pepper chopped
  17. parsley pimentos
  18. and
  19. cheese
  20. Spoon potatoes into lightly greased baking
  21. dish
  22. Pour
  23. sauce on top and heat in oven at 350 for 10 to 15 minutes
  24. Serves 8 to 10
