Cinnamon Snaps

Ingredients
- 12 c butter softened 1 stick
- 34 c plus 3 Tbsp sugar
- 1 egg
- 1 tsp vanilla extract
- 1 12 c all-purpose flour
- 12 tsp baking soda
- 12 tsp baking powder
- 14 tsp salt optional
- 2 tsp ground cinnamon
Directions
- Heat oven to 375
- Beat butter and 34 cup sugar until light and fluffy
- Beat in egg and extract
- Combine flour baking soda baking powder and salt
- Gradually add to butter mixture mixing well
- Combine cinnamon and remaining 3 tablespoons sugar in small bowl
- Roll dough into 1-inch balls and roll in sugarcinnamon mixture
- Place 2 inches apart on lightly buttered cookie sheet Bake 11 to 12 minutes or until light golden brown
- Let stand on cookie sheet
- Transfer to wire cooling racks
- Makes about 2 dozen cookies
