Cinnamon Snaps

Ingredients

  • 12 c butter softened 1 stick
  • 34 c plus 3 Tbsp sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 12 c all-purpose flour
  • 12 tsp baking soda
  • 12 tsp baking powder
  • 14 tsp salt optional
  • 2 tsp ground cinnamon

Directions

  1. Heat oven to 375
  2. Beat butter and 34 cup sugar until light and fluffy
  3. Beat in egg and extract
  4. Combine flour baking soda baking powder and salt
  5. Gradually add to butter mixture mixing well
  6. Combine cinnamon and remaining 3 tablespoons sugar in small bowl
  7. Roll dough into 1-inch balls and roll in sugarcinnamon mixture
  8. Place 2 inches apart on lightly buttered cookie sheet Bake 11 to 12 minutes or until light golden brown
  9. Let stand on cookie sheet
  10. Transfer to wire cooling racks
  11. Makes about 2 dozen cookies
