Clam Chowder
Ingredients
- 2 slices bacon
- 1 7 oz can minced clams with liquid
- 1 large potato peeled and cubed
- 14 c minced onions
- 12 c water
- 1 13 oz can evaporated milk
- 1 Tbsp butter
- dash of salt and pepper
Directions
- Put bacon in a 2-quart casserole
- Cover with paper towel Microwave 1 12 to 2 minutes until crisp
- Remove paper towel and bacon leave drippings in casserole
- Crumble bacon and set aside Add clams liquid potato onions and water
- Cover and microwave 8 minutes on High stirring every 3 minutes
- Add milk bacon seasonings and butter
- Cover and cook 2 to 3 minutes until it comes to a boil
- Let stand 2 minutes
- Serves 3 to 4
