Clam Chowder

Ingredients

  • 2 slices bacon
  • 1 7 oz can minced clams with liquid
  • 1 large potato peeled and cubed
  • 14 c minced onions
  • 12 c water
  • 1 13 oz can evaporated milk
  • 1 Tbsp butter
  • dash of salt and pepper

Directions

  1. Put bacon in a 2-quart casserole
  2. Cover with paper towel Microwave 1 12 to 2 minutes until crisp
  3. Remove paper towel and bacon leave drippings in casserole
  4. Crumble bacon and set aside Add clams liquid potato onions and water
  5. Cover and microwave 8 minutes on High stirring every 3 minutes
  6. Add milk bacon seasonings and butter
  7. Cover and cook 2 to 3 minutes until it comes to a boil
  8. Let stand 2 minutes
  9. Serves 3 to 4
