Classic Shortbread

Ingredients

  • 1 stick butter at room temperature
  • 13 c powdered sugar unsifted
  • 14 tsp vanilla
  • 1 c flour

Directions

  1. Cream butter until light
  2. Mix in powdered sugar then vanilla Work in the flour
  3. Knead dough on unfloured surface until smooth Use a shortbread pan or jelly roll pan
  4. Spray lightly with nonstick spray
  5. Put ball of dough in the middle of pan and spread to sides
  6. Prick entire surface with a fork then bake at 325 for 30 to 35 minutes until very lightly browned
  7. Be sure middle of shortbread is completely cooked
  8. Cool 10 minutes then loosen with a knife and flip onto a cutting board
  9. Cut while still warm into desired shapes
  10. Top with Lemon Curd jelly or jam or dip in chocolate
