Coconut Bread

Ingredients

  • 3 c flour
  • 2 tsp baking powder
  • 12 tsp salt
  • 12 tsp baking soda
  • 2 c sugar
  • 1 c vegetable oil
  • 4 eggs slightly beaten
  • 2 tsp coconut extract
  • 1 c buttermilk
  • 1 c shredded coconut
  • 1 c chopped walnuts

Directions

  1. Combine flour baking powder and salt set aside
  2. In large bowl combine sugar oil eggs and extract
  3. Add dry ingredients alternately with buttermilk stir just until moistened
  4. Fold in coconut and walnuts
  5. Pour into 2 greased and floured 8 12 by 4 12 inch loaf pans
  6. Bake at 325 for 1 hour or until bread tests done
  7. Cool 10 minutes in pans before removing to a wire rack to cool completely
