Coconut Bread
Ingredients
- 3 c flour
- 2 tsp baking powder
- 12 tsp salt
- 12 tsp baking soda
- 2 c sugar
- 1 c vegetable oil
- 4 eggs slightly beaten
- 2 tsp coconut extract
- 1 c buttermilk
- 1 c shredded coconut
- 1 c chopped walnuts
Directions
- Combine flour baking powder and salt set aside
- In large bowl combine sugar oil eggs and extract
- Add dry ingredients alternately with buttermilk stir just until moistened
- Fold in coconut and walnuts
- Pour into 2 greased and floured 8 12 by 4 12 inch loaf pans
- Bake at 325 for 1 hour or until bread tests done
- Cool 10 minutes in pans before removing to a wire rack to cool completely
