  • 3 eggs
  • 1 c coconut milk or 12 coconut milk and 12 regular milk
  • 3 c sifted cake flour
  • 34 to 1 c shredded coconut
  • 1 tsp vanilla
  • 2 c white sugar
  • 34 c Crisco
  • 2 12 tsp baking powder
  • pinch of salt
  • coconut extract to taste

Directions

  1. Cream eggs sugar and Crisco
  2. Add milk baking powder flour vanilla and coconut
  3. Bake 30 minutes at 350
