Coconut Cream Pie

Ingredients

  • 23 c sugar
  • 12 c flour
  • 14 tsp salt
  • 3 egg yolks
  • 2 c milk
  • 1 tsp vanilla flavoring
  • 1 9-inch pie shell
  • 1 12 c coconut

Directions

  1. Mix sugar flour and salt
  2. Beat egg yolks add milk
  3. Stir into flour mixture blending well
  4. Cook over hot water until thickened stirring constantly
  5. Cover cook 10 minutes
  6. Cool slightly
  7. Add vanilla and 1 cup of coconut
  8. Pour into pie shell cool
  9. Cover with meringue and sprinkle the rest of coconut over meringue
  10. Return to oven at 325 for 15 to 20 minutes or until brown
