Coconut Cream Pie
Ingredients
- 23 c sugar
- 12 c flour
- 14 tsp salt
- 3 egg yolks
- 2 c milk
- 1 tsp vanilla flavoring
- 1 9-inch pie shell
- 1 12 c coconut
Directions
- Mix sugar flour and salt
- Beat egg yolks add milk
- Stir into flour mixture blending well
- Cook over hot water until thickened stirring constantly
- Cover cook 10 minutes
- Cool slightly
- Add vanilla and 1 cup of coconut
- Pour into pie shell cool
- Cover with meringue and sprinkle the rest of coconut over meringue
- Return to oven at 325 for 15 to 20 minutes or until brown
