Coconut Delight

Ingredients

• 12 gal ice cream
• 2 sleeves of Ritz crackers
• 14 c sugar and
• 1 12 stick of melted oleo
• 1 c milk
• 3 boxes coconut cream instant pudding jello is best

Directions

1. Spray a large pan
2. Place 12 gallon of vanilla ice cream in a bowl to soften
3. Crush 2 sleeves of crackers
4. Add sugar and stick of melted oleo
5. Mix together and press in bottom of pan
6. Mix softened ice cream with 1 cup milk and 3 boxes coconut cream instant pudding
7. Spread over the crust - Freeze for 4 hours
8. Top with Cool Whip and toasted coconut optional
9. May be refrozen
