Coconut DevilS Food Cake

Ingredients

  • 34 c plus 1 Tbsp baking cocoa
  • 23 c boiling water
  • 1 34 c flour
  • 1 12 tsp soda
  • 14 tsp salt
  • 34 c butter softened
  • 2 c sugar
  • 1 tsp vanilla extract
  • 2 eggs at room temperature
  • 34 c buttermilk
  • Frosting
  • 1 3 oz can coconut

Directions

  1. Mix baking cocoa with boiling water in small bowl until smooth
  2. Mix flour soda and salt together
  3. Cream butter sugar and vanilla in large mixer bowl until light and fluffy
  4. Add eggs 1 at a time beating well after each addition
  5. Add flour mixture alternately with buttermilk beating well after each addition Stir in cocoa mixture
  6. Pour into 2 greased and floured 9-inch round cake pans
  7. Bake at 350 for 35 minutes
  8. Cool in pans for 10 minutes
  9. Remove to wire racks to cool completely
  10. Spread frosting between layers and over top and side of cake
  11. Sprinkle with coconut press lightly into frosting
  12. Yield
