Coconut Island Cookies

Ingredients

• 3 3 oz envelopes unsweetened chocolate premelted
• 1 tsp instant coffee
• 12 c soft butter
• 1 c packed brown sugar
• 1 egg
• 23 c dairy sour cream
• 2 c flour
• 12 tsp soda
• 12 tsp salt optional
• 1 c flaked coconut

Directions

1. In large mixer bowl combine chocolate coffee butter brown sugar egg sour cream flour soda salt and 13 cup coconut Mix on lowest speed until a dough forms
2. Drop by rounded teaspoon onto greased cookie sheets 12 to 15 minutes
3. Frost warm Sprinkle with remaining coconut
