Coffee Cake Muffins

Ingredients

• 1 12 c flour
• 12 c sugar
• 2 tsp baking soda
• 12 tsp salt
• 14 c shortening
• 1 egg beaten
• 12 c milk
• 12 c packed brown sugar
• 12 c chopped pecans
• 2 Tbsp flour
• 2 tsp cinnamon
• 2 Tbsp melted butter

Directions

1. Sift first 4
2. dry ingredients into bowl
3. Cut in shortening until crumbly
4. Stir in eggs and milk until just mixed
5. Combine brown sugar pecans flour cinnamon and butter in bowl mix well Fill greased muffin cups 23 full alternating layers of batter and pecan mixture
6. Bake in 375 oven for 20 minutes
7. Yields 1 dozen
