Ingredients

  • 6 potatoes
  • 6 scallions
  • 1 c milk
  • 3 Tbsp butter
  • 1 tsp salt
  • 14 tsp pepper
  • 2 c cooked cabbage
  • 12 Irish bacon rashers

Directions

  1. Chop 6 scallions very fine
  2. Soak in cup milk with 1 teaspoon of salt for 12 hour
  3. Put in a saucepan and simmer for 12 hour Boil 6 medium potatoes peeled in salt water
  4. Cover until tender Drain dry and begin to mash
  5. When smooth beat in the scallions and milk
  6. Add 3 tablespoons butter and continue beating over low heat
