Ingredients
- 6 potatoes
- 6 scallions
- 1 c milk
- 3 Tbsp butter
- 1 tsp salt
- 14 tsp pepper
- 2 c cooked cabbage
- 12 Irish bacon rashers
Directions
- Chop 6 scallions very fine
- Soak in cup milk with 1 teaspoon of salt for 12 hour
- Put in a saucepan and simmer for 12 hour Boil 6 medium potatoes peeled in salt water
- Cover until tender Drain dry and begin to mash
- When smooth beat in the scallions and milk
- Add 3 tablespoons butter and continue beating over low heat
