Cold Chicken Curry
Ingredients
- 1 Tbsp salt
- 1 16 oz pkg white rice
- 8 c cooked chicken cut into large chunks
- 2 c raw cauliflower sliced
- 1 8 oz bottle cream-style French dressing
- 1 c mayonnaise
- 1 Tbsp curry powder
- 12 tsp milk
- 1 c thinly sliced bell pepper strips
- 1 c sliced red onion
- 1 c chopped celery
Directions
- Cook rice refrigerate until cool
- Toss rice cauliflower and French dressing cover and refrigerate for 2 hours
- In a large bowl combine the mayonnaise curry powder salt and pepper
- Stir in milk
- Add chicken and toss
- Refrigerate for 2 hours
- In a large bowl mix the rice and chicken
- Add green pepper celery and onion
- Turn on platter lined with romaine leaves
- Top with almonds
