Colombian Salad

Ingredients
- 2 c canned drained garbanzo beans
- 12 c olive oil
- 14 c lemon juice
- 2 tsp salt
- 14 tsp white pepper
- 12 tsp ground coriander
- 1 onion sliced very thin
- 1 lb firm cream cheese
- crisp shredded lettuce
Directions
- Mix olive oil lemon juice salt pepper and coriander
- Pour over lettuce onions olives and garbanzo beans
- Chill covered 45 minutes
- Place cream cheese in freezer for 30 minutes to help firm it up
- Cut into cubes and refrigerate immediately
- At very last minute mix into lettuce
- Serves 8
