Colorado Meat Loaf Surprise

Ingredients

• 1 12 lb ground beef
• 12 c soft bread crumbs
• 13 c minced onion
• 12 c ketchup
• 1 14 tsp seasoned salt
• 14 tsp pepper
• 3 c whipped potatoes
• 14 c minced green onions
• 3 Tbsp chopped parsley
• 1 egg

Directions

1. In large bowl combine beef bread crumbs onion egg ketchup 1 teaspoon salt and 18 teaspoon pepper
2. Blend well and shape into a loaf
3. Place in a shallow baking pan
4. Bake at 350 for 1 14 hours
5. Combine whipped potatoes green onions parsley remaining 14 teaspoon salt and remaining 18 teaspoon pepper
6. Spread over top and sides of meat loaf
7. Bake 20 minutes longer
8. If desired broil until golden brown
